Linguini Pasta with Vegetables and Bacon
This is one of my favorite guilty pleasure's when it comes to pasta dishes. This delicious linguini recipe includes tomatoes, onions, mushrooms, bacon, and delectable spices. This Italian combination will make your mouth water, and have you asking for seconds.

Linguini Pasta with Tomato, Onion, Mushroom and Bacon

Yields: 6 Servings
Ingredients for Linguini Pasta with Vegetables and Bacon
- 12 Slices Bacon, Chopped
- 4 Cups (or 2 Cans) Chicken Broth
- 4 Cans (or 14.5 Ounces each) Diced Tomatoes, (Regular and Italian Style)
- I Small Box Mushrooms
- I Medium Onion, Diced
- 4 Cloves Garlic, Minced or Grated
- I Tablespoon Fresh Parsley (or 2 Tablespoons dried Parsley)
- 1/8 Teaspoon Red Pepper Flakes, (Optional)
- 1 Tablespoon Italian Seasoning
- 1/4 Teaspoon Salt
- 1 Teaspoon Pepper
- 2 Tablespoons Parmesan Cheese
- 3 Tablespoons Olive Oil
- 4 Ounces Cream Cheese
- 16 Ounces (or 1 Pound) Uncooked Linguini
Linguini Pasta with Tomato, Onion, Mushroom and Bacon
- -Cook bacon in skillet until crisp -Remove bacon and place on paper towel to drain excess fat -Set Aside
- -Boil linguini in pan until al-dente -Drain pasta in colander and rinse with cold water -Set Aside
- -Dice Onions -Chop bacon into bite-size pieces -Slice mushrooms -Finely chop fresh parsley
- -Heat olive oil in skillet on medium-high heat -Saute' onions, mushrooms, garlic, red pepper flakes and parsley -Cook until onions are translucent and garlic is browned -Leave in skillet
- Add remaining ingredients to skillet: Linguini, bacon, diced tomatoes, chicken broth, cream cheese cubes, parmesan cheese, bacon, salt, pepper and Italian seasoning,
